Dan D'Agostino
Intentional by nature.
At Salt & Ember, we return to the primary elements of the kitchen: the raw power of the flame and the precision of the mineral.
Our hearth is the heart of the room. We utilize live fire not as a novelty, but as a craft—using smoke and char to reveal the character of seasonal Texas ingredients. Every dish is a study in restraint, finished with hand-harvested salts and served in a space designed for the unhurried.
We invite you to sit close to the fire and stay a while.
Dan D’Agostino worked with a team supporting Qatar’s Supreme Committee for Delivery & Legacy, alongside nightlife leaders Jesse and Cy Waits, to help design and develop world-class dining and entertainment experiences for the 2022 FIFA World Cup. His work included curating entertainment districts, festival concepts, A-list performances and designated venues for alcohol service. The team also helped shape the complete guest journey; from transportation and stadium arrival to concessions, departure and post-match dining and entertainment, connecting the match-day experience with hospitality across Qatar.

Dan D’Agostino initially joined Evening Entertainment Group as fractional Chief Development Officer, focusing on the expansion of its flagship Bottled Blonde brand, before serving for several years as interim, full-time Chief Operating Officer. During his tenure, he helped secure the partnership with Jelly Roll and worked directly with the artist, his creative team and manager John Meneilly to design and develop Goodnight Nashville, a signature bar, restaurant and entertainment destination on Lower Broadway. The venue generates more than $30 million in annual revenue and $12 million in annual EBITDA, demonstrating the commercial potential of pairing authentic artist identity with disciplined hospitality execution. Dan continues to develop additional honky-tonk concepts in Nashville.

Dan D’Agostino joined The ONE Group as Senior Vice President of Operations when STK, the pioneering steakhouse concept created by Jonathan Segal and Celeste Fierro, had four locations: New York, Miami, Las Vegas and Los Angeles. He helped stabilize the business, professionalize operations and establish the systems and standards needed for international expansion, supporting the growth of both STK and the French party-bistro brand Bagatelle. His work helped translate a distinctive blend of dining, music and nightlife into an operating model built to scale globally.

As part of the team behind Light Group and Light Nightclub at Bellagio, which opened in December 2001, Dan D’Agostino helped establish European-style bottle service as a defining feature of luxury Las Vegas nightlife. His work helped turn service into spectacle, pairing a sophisticated VIP experience with elaborate bottle presentations—from sparklers to theatrical props and choreographed arrivals. The concept helped shape the service rituals and experiential approach that became hallmarks of modern nightlife.
